David Ronald “Ron” Edelstein, 72, passed away under hospice care on July 21, 2025 in Lexington, KY. Mr. Edelstein was born in Morganfield, Kentucky on March 4, 1953 to the late Joseph Edelstein and Adelyn O’Nan. He was a Christian, who recently reaffirmed his faith through baptism.  

 

Ron was a 1971 graduate of Henry County high school, and later received a basketball scholarship to continue his education at Somerset community college. While attending SCC, Ron earned his degree in horticulture, which led to a career in landscape architecture. He later pursued a career in painting, and even dabbled as a chef.  

 

In 1983, Ron married Holly Griffin Edelstein, and they enjoyed almost 40 years of marriage, resulting in two children, before her passing in 2022. Ron was a devoted husband, father and animal lover. He rescued and cared for many fur babies throughout his life.  

 

Ron and Holly resided in Versailles where they were active members of the community. Ron could often be found at Addie’s at the Woodford Inn, where he loved to chat up the locals and tourists alike. He did some work there as a chef and became known as the “Eggman” for his ability to whip up a fantastic breakfast.  

 

Ron gave a lot of his time to children in the community by helping them develop personally and in sports. He did this mainly through coaching youth baseball teams. When he wasn’t coaching baseball, he enjoyed fishing, playing golf and fussing at the TV over his favorite sports teams. 

 

In more recent years, his focus was on being a doting “Grumps” to his 2 grandsons, Finn and Cooper, who brought him so much joy.

 

Ron is survived by his children, Megan Edelstein (John) Gordon and Nick Edelstein; grandsons, Griffin and Cooper Gordon; sisters, Paula Edelstein (Mark) McGlothin and Linda (Bruce) Parker; four nieces; and many cousins.  

 

At the request of the deceased, there will be no services. In lieu of flowers, if felt led, you could make a donation in his name to Bluegrass Care Navigators.
