Kay was born May 12th 1919, in Texhoma, OK to S.H. and Almeda Cox. She was the middle of nine children. Kay worked as a nanny for the Robertson children, Jack and Jill, when she first came to Oregon. She also worked as a bookkeeper at the State Bank of Malheur County. She also helped her father run S.H. Cox Station which was later known as Vern's Market on Oregon Slope. She married Blaine Matthiesen on July 30, 1950 at the Park Union Community Church on Oregon Slope. They had four children together and were married for 57 years. They enjoyed working side by side at Vern's Market for many years. She was a member of Park Union and later the First Baptist Church of Ontario, she taught Sunday School and Bible School. Kay was a room mother for all her children which kept her busy with her four. She was a member of the Oregon Slope Grange, The Ladies Club, and a 4-H Club Leader. She belonged to Sadultions Bible Study and the First Baptist Bible Study. She was also a Den Mother for J.B. and belonged to VFW and Hyline Club. She and Blaine went fishing with her sister Madge and husband every chance they got. Her sister Sue and her husband came often and played cards. She moved to her daughter Tamara and Marlin's house after losing Blaine. She lived there until her death and was lovenly cared for. When ever one of the family would visit and be ready to leave, she would sing her little songs, esp. "I love you a Bushal and a Peck". She leaves behind her children, Donna (Laurence) Stringer, Tamara (Marlin) Oltman, Sandra (Jeff) Nelson, J.B. Matthiesen (friend Karla); seven grandchildren, Tawnya Mangini, Amie Nguyen, Clint Lovell, Jared (Lisa) Nelson, Lydia (Roger) Conley, Sarah (Ken) Townsend, Phylicia Matthiesen (friend Kyle); and nine soon-to-be 10 great grandchildren, Makeena Mangini, Jarett Mangini, Raylynn Nelson, Jenifer Nelson, Alexis Nelson, Emalyne Matthiesen, Kailee Nguyen, Courtney Lovell and Henry Conley; also several nieces and nephews and one sister, Loyce Baker and one brother, Wayne Cox. She was preceded in death by her parents, husband, three brothers, and three sisters. She was deeply loved and will be greatly missed. We would like to thank the XL Hospice for their loving care of our Mother.Devoted wife, mother, grandmother, great grandmother, and friend passed away peacefully on May 9, 2011 at the age of 91 at home.
