Carson Kate Knox, 31½, went to Heaven on January 17, 2022 in Lexington. Carson was born in Lexington July 27, 1990 to Donna and Martin Knox. She was a VIP greeter with McLeod’s Coffee House and was a member of St. Luke UMC. Carson was a kind, courageous, and caring angel. She had a sweet, engaging smile for everyone while sitting in her wheelchair. She was active in United Methodist Women, Easter Seals Cardinal Hill Adult Day Health, Best Buddies at UK, Toyota Bluegrass Miracle Baseball League, Jesus Prom and parties at Southland Christian Church, Meals on Wheels, Kids Café, Lexington Parks and Rec Dances, and activities at McLeod’s Coffee House on Southland Drive. She enjoyed traveling throughout the USA – going water tubing on Barren Lake in Bowling Green, snow tubing on Christmas Mountain in Wisconsin, snow skiing on Boyne Mountain in Michigan, sailing in South Carolina, North Carolina, New York and Florida. Her favorite animals were sloths and flamingos! One of her most joyous moments was spending time with Paula Deen and her husband, Michael. She loved Dollywood in Pigeon Forge and eating at fine restaurants. We will forever miss her. Rest in Peace our beloved angel. Visitation will be Saturday, January 29, 2022 at St. Luke UMC, 2351 Alumni Drive, Lexington from 10 – 12 pm with a Celebration of Life service following at noon. Following the service, lunch will be enjoyed by all in the gym. Memorial contributions may be made in honor of Carson to Meals on Wheels 1675 Strader Dr. Lexington, KY, 40505, GO InterNational P.O.
